PREMIUM MUKUZANI - RED DRY WINE
Selected block of Saperavi from our MUKUZANI vineyards has been green-harvested during the first days of August in order to artificially reduce the grape yield down to 6-7 tons per hectare and thus, increase the overall quality and concentration of remaining grapes. Ih the middle September grapes were hand-harvested in small boxes, gently de-stemmed and lightly crushed into stainless steel 10m³ tanks. Wine was fermented using the cultural yeast strains. Skin and cap management was performed by `délestage` and `remontage`. After 12-15 days of maceration, wine was racked clean and transferred for malolactic fermentation and 10-12 months of aging in 225 l oak barriques. Maturation continues in stainless steel tanks before bottling process, complemented by bottle aging at the optimum temperature prior to the release.
